A Delicious Breakfast, Right Here in Albuquerque
The name of the classic meal Huevos rancheros translates literally as “rancher’s eggs,” and has historically been a popular traditional breakfast on Mexican farms.
It’s a favorite dish of ours here at Albuquerque’s Cocina Azul. (Although please don’t ever ask to pick just a single favorite dish that we make. We can’t do it.)
We even like how it looks—all that food covering the plate, the colors of the green and red chile, the brightness of the eggs, the round appeal of the beans, the tortilla neatly folded and at the ready, ready to help you leave no trace of sauce left on your plate.
But we’re getting ahead of ourselves.
First we should say that our delicious huevos rancheros are the classic Mexican (and New Mexican) breakfast.
We should say that it comes with two eggs on a corn tortilla.
